We are trying to replace Maida in many dishes today with whole wheat flour, which is more nutritious. The Multi-Grain Atta is a way to make whole wheat flour more nutritious. This blends the benefits of different grains to provide a more nutritious and healthy diet.

Instead of buying multigrain flour at the market, make it yourself!

Create your Multigrain Atta

The following ingredients are required to make 10kgs of multigrain flour:

  • Whole Wheat – 7 Kgs
  • Finger Millet Ragi – 500gms
  • Bajra or Pearl Millet – 400gms
  • Sorghum, or Jowar – 400 gms
  • Bengal Gram or Channa Dal. Whole Channa is also possible – 400gms
  • Soya Beans 400 gms
  • 400gms Maize/Corn
  • Barley – 200gms
  • Oats – 300 grams

Making Multigrain Flour

First, wash all ingredients thoroughly to get rid of any dust particles. Except for whole wheat grains and oats, dry roast the ingredients until they have a pleasant aroma. Let it cool on the stove. Mix all ingredients and then grind it in a flour mill. Let the flour cool on a tray or surface. Now your multigrain flour can be used. It should be stored in an airtight container.

You can adjust the proportions to suit your needs. This flour can be substituted for maida in cakes, cookies, bread, and puris.

This is a simple recipe for chocolate cake that can be made with multigrain flour in place of maida.

Healthy Chocolate Cake Recipe using Multigrain Flour

Ingredients

  • Multigrain Flour 2 1/4 Cups
  • Eggs – 4
  • Cocoa Powder – 3/4 cup
  • Powdered sugar – 3/4 cup
  • Unsalted butter – 1/2 cup
  • Baking Powder – 1/2 teaspoon
  • Baking soda – 1/2 teaspoon
  • Salt – A pinch
  • Vegetable Oil – 1/3 cup
  • 1/2 cup of coffee or water
  • 1 cup milk
  • Vanilla essence – 1 teaspoon

Instructions

Preheat the oven to 350F

Grease a baking tin with oil, and then dust it with flour.

Mix the flour, baking powder, and soda in a large bowl. Make sure to get rid of any lumps.

Add a pinch of salt to this mixture.

Mix the cocoa powder and powdered sugar.

Combine all ingredients. Mix the ingredients with an electric mixer after adding butter.

Continue beating the mixture while slowly adding oil. Continue stirring the mixture until it becomes granular.

Mix the coffee, water, Vanilla extract, and milk in a small bowl. Add it to the flour mixture.

Mix well with the beater again, keeping it at low speeds.

Mix the flour with the eggs one at a time, breaking them in one at a time.

Continue beating until the batter becomes thin and fluffy.

Bake the cake batter in a pan for about 30 to 35 minutes. Use a toothpick to check for readiness.
